Chicken Tomato Soup

I don’t usually make hot food in the summer, unless it’s on a bbq.  But I had some tomatoes that needed to be used and some chicken breasts to cook.  I thought I would make chicken and rice with a tomato stew, but it quickly turned into a beautiful soup.   I threw in onions, carrots, mushrooms and some Mexican spices, along with the juice a lemon in for good measure.  It was easy and fun to make.  I love to let my instinct’s go and see where they take me.   I would add cilantro at the end but when I made this I didn’t have any.  But I will for the next batch!

 

 

Chicken Tomato Soup

Easy weeknight dinner
Ingredients
  • 4 Chicken breasts, skin on, bone in
  • 1 Medium onion, chopped
  • 2 Carrots, peeled and sliced into rounds
  • ½ Container of button mushrooms (more if you like mushrooms), sliced
  • 1 Potato chopped into squares
  • 6 Large vine ripe tomatoes, roughly chopped
  • 4 Cups homemade chicken stock
  • 1 Lemon, juiced
  • 1 Tbsp Olive oil, more if needed
  • 1 Tsp chile powder
  • 1 Tsp cumin
  • 1 Tsp taco seasoning
  • 1 Tsp Extra Bits from House of Zeta Hot Sauce
  • Salt & pepper
  • Cilnatro chopped for garnish
Instructions
  1. Add a tablespoon of olive oil to a dutch oven on medium heat
  2. Dry off the chicken breasts and season with salt and pepper
  3. Place chicken skin side down for about 8-10 minutes
  4. Flip chicken over and turn down heat a little and cover with a lid.
  5. Cook till done.
  6. Set aside to cool
  7. Add onion on medium heat.
  8. Cook for a minute or two
  9. Add mushrooms and cook for 3-5 minutes
  10. Add potato, cook for 5 minutes
  11. Next add carrots and cook for 5 minutes
  12. Add chile powder, cumin, taco seasoning and Extra Bits
  13. Add tomatoes and cook down on a low heat till they make a sauce
  14. If you like a spicy soup add more Extra Bits after tomatoes
  15. While that is cooking shred chicken breasts.
  16. When tomatoes have made a sauce add chicken stock, chicken and lemon juice
  17. Bring to a quick boil and then simmer for about 10 minutes till potatoes are fully cooked.
  18. Serve with brown rice at the bottom of bowls
  19. Garnish with cilantro

 

Chicken Pozole

Chicken Pozole

Ingredients
  • 1 Chicken
  • ½ Red bell pepper chopped
  • 1 Onion chopped
  • 2 Carrots, search peeled and roasted
  • 2 Celery stalks, chopped
  • 1 Large can hominy
  • 1 Small tomato chopped or 10 cherry cut in half
  • 6-8 Cups chicken stock(use stock from boiling chicken)
  • 2 Garlic cloves, chopped
  • Cumin
  • Chili powder
  • Chipotle powder
  • 2 Bay leaves
  • Salt and pepper
  • Cilantro, chopped
  • Red onion
  • Lime wedges
Instructions
  1. Boil chicken in water, salt, pepper and bay leaf
  2. When chicken is done remove and let cool, save water
  3. When chicken is cool to touch shred and set meat aside
  4. Use chicken water as stock
  5. Add bay leaf, garlic and spices, salt and pepper to taste
  6. Add carrots, celery, onion, tomato and hominy.
  7. Bring to a simmer
  8. When vegetables soften add chicken
  9. Add red bell pepper
  10. Add more spices to taste.
  11. When chicken is brought to temperature of soup your soup is done.
  12. Garnish with cilantro, red onion and lime wedge.
Notes
Roasting carrots before hand will give it a smokey flavor. You can also sauté the onions and add carrots, celery and tomatoes before adding chicken broth and use butter or olive oil to sauté vegetables

Pozole is total comfort food.  And with it being soup season,  the perfect hearty lunch or dinner.  So grab yourself some comfort and enjoy!

Spinach And Onion Tart With Cherry Tomatoes

Every once in a while we have some free time at work and I like to make something out of what’s around.   As most of you know, sales this is one of my favorite things to do.   We always have a few ingredients lying around, ask like dough, sildenafil onions, eggs, among other random items.  So on this rare slow day, I decided to put some of these ingredients to use.  Well, we did plan this the day before, as we needed a few extra ingredients, but you get the picture.  It turned out so good, my colleague’s said I had to write about it.  As usual I didn’t really measure, but don’t let that stop you, it’s quite easy to make.  This is a recipe for two tarts. We make dough in huge quantities so if you only want one tart cut recipe in half, but use one whole onion.  Also, I don’t know how much commercial store bought dough makes, so use your best judgement.  Of course homemade dough is best!

 

 

Spinach And Onion Tart With Cherry Tomatoes

Ingredients
  • 1 round of pastry dough devided into two
  • 2 packages of frozen spinach
  • 1½ large onions
  • 1 package of grape tomatoes
  • 1 8oz package of Gouda cheese
  • 2 garlic cloves
  • 2 tablespoons of butter
  • Salt and pepper
  • Milk or egg for wash on crust, or combine and use both.
Instructions
  1. Preheat oven to 350
  2. Thaw spinach and squeeze out the liquid
  3. Roll dough into a rectangle like shape and place on parchment baking sheet, put in fridge
  4. In large skillet melt butter
  5. On medium heat sauté onion with salt and pepper
  6. Cover for about 20 minutes till you get some browning
  7. Chop garlic and separate the cloves
  8. Rinse and chop tomatoes in half, set to the side.
  9. Grate cheese
  10. Add spinach, garlic salt and pepper and sauté till ingredients are incorporated
  11. Grab dough and sprinkle a little bit of cheese on dough
  12. Then place spinach, onion in center of dough
  13. Spread it out leaving about an inch of dough for a crust
  14. Add tomatoe halves and sprinkle rest of cheese on top
  15. Fold edges of dough around the mixture.
  16. Doesn't have to be pretty, just make it so nothing will flow over.
  17. Egg or milk wash the crust.
  18. Back for 25-30 minutes.
  19. Check after 25 minutes
  20. You want a golden crust and bottom of tart to cook but don't burn it.
  21. Let cool before cutting and serving.

With winter setting in, ask we all want to hunker down and eat.  And what better way then with a big ole piece goodness called lasagna?!  Do you make it at Christmas or New Years, or whenever you want that giant casserole dish of baked noodles with sauce and cheese?  Do you add meat or vegetables?  Maybe you’re a white sauce kind of person?  For me, it all comes down to one thing, tomato sauce.  It screams lasagna.  All red and bubbly with veggies and Italian sausage, yum!

I usually start with one large and one medium can of whole tomatoes.  Giving them a medium rough chop so you have nice chunks of tomato.  Then I saute onions, garlic and whatever vegetables I want in my sauce, like celery and bell peppers, all seasoned with the herbs I’m using in the sauce.  I find it helps get things going.  If I am adding sausage, I cook the veggies in with the sausage, onions and garlic first then the rest.  Next I combine the tomatoes, veggies, meat and simmer for a few minutes then add some paste to thicken.  More herbs and simmer for as long as necessary.  I even slice zucchini to put in between the layers.

When it comes to cheese, fresh is best.  But we all know we can’t always get it or have the time to make it.  So do your best and it will be just fine.  I do stir up my ricotta if it comes store bought, makes it easier to spread or drop.  But my big discovery is to grate most or all of your mozzarella, which can be evenly distributed.  This will keep you from having that moment when you accidentally sliced it too thick and don’t have enough to cover the top.  Oops!  Been there done that! And who ever thought of cottage cheese as a substitute for ricotta should be shot.  Don’t do it ever! You are not doing yourself or your guests any favors.

Then there is the debate on the noodles.  Fully cook, don’t cook, cook partially.  What do you do?  Ive done all three.  I prefer to cook them al dente so they finish with the flavors of the sauce.  Also cook and extra one or two just in case one rips.  If not then have fun eating it while the lasagna cooks.

Once you have done all this, simply put it in the oven at 350 till golden bubbly, about 30-45 minutes and when done, let it stand for about 15 minutes and serve.   What could be more perfect and easy then that?

*if you think you need more sauce, always add another can of tomatoes, medium or large depending on how saucy you want your lasagna.  Or add another dollop of paste to thicken.*

Tomato Soup in Winter

It may be winter but I thought it was time for a little summer.  So here is my recipe for a roasted tomato soup that will make you warm with the summer sun!

Roasted Tomato Soup

Serves: 4-6
 
Ingredients
  • 3-3½ lbs of Roma Tomato's
  • 4 cloves of Garlic chopped
  • ½ cup Olive Oil
  • Salt and Pepper
  • a pinch of Thyme
  • 1 quart of Chicken Stock
Instructions
  1. Preheat oven to 450 degrees F
  2. Cut tomato's lengthwise
  3. Core tomato's wit spoon saving inside for later
  4. Place on cookie sheet skin side down
  5. Sprinkle garlic in all tomato cups
  6. Salt and pepper tomato's
  7. Drizzle olive oil on tomato's
  8. Bake for 20 to 30 minutes or until caramelized
  9. Remove from oven and place in pot with chicken stock
  10. Bring to boil and reduce heat, cheap simmer for 15 minutes.
  11. When done blend or use immersion blender to puree
  12. Put back in pot on low heat and serve.
Notes
If you want you can remove the skins after roasting, just wait till they have cooled before you handle them. If you want a creamy soup just add heavy cream when you have put it back on the stove on the low heat. If you want a little thicker soup, cut down the amount of chicken stock by about ¼ cup.

Stove Top Smoker

What happens when a stove top smoker and a rack of ribs collide? The best ribs ever!!! O.K., malady so I may be biased, this but I can’t help it. We bought a stove top smoker last year because we wanted to go camping and the weather wasn’t cooperating. We searched high and low and found one that we liked and have been using it ever since. Last night we used it to smoke some ribs and they were so good we ate most of the rack in one sitting!  We also made sweet and red potato mash with a cucumber, rx radish and tomato salad in a spicy red wine vinaigrette. For the ribs we used are Camerons smoker and apple wood chips to give it that smokey sweetness to balance out the dry rub we made. The potato mash is one sweet potato to four medium red potato’s and the dressing for the salad was red wine vinegar, olive oil and Tapatio hot sauce. Needless to say there was nothing left.  So the next time you want that feeling of camping and can’t get there, remember you can always use a stove top smoker.

Ingredients
  • 1 Tablespoon of Hungarian Paprika
  • 1 Tablespoon of crushed Coriander Seeds
  • ¾ Tablespoon fresh Cracked Multi-Peppercorns(green,black,pink & white)
  • 1 Tablespoon of kosher salt
Instructions
  1. Combine ingredients in a bowl
  2. Pat rack of ribs dry with paper towel
  3. Rub spices on both sides of ribs
  4. Put in smoker
